Pronunciation: lin-GWEE-nee
Linguine is a long thin noodle, similar to spaghetti but flat rather
than round. Like other pastas the basic dough recipe is a simple
combination of strong durum wheat and water. Linguine is a versatile
pasta shape that works especially well with lightly textured sauces such
as tomato-based sauces or pesto, with or without pieces of food such as
shellfish or fine green beans. Cooking time 10-12 min.
The Recipe:
Linguine with Salmon
(preparation time: 20 minutes)
Ingredients for 4 people:
15 ounces linguine
12 ounces cooked fresh salmon or thinly sliced, smoked salmon
2 green onions, sliced
1 garlic clove, minced
1 tablespoon butter
1 cup whipping cream
pepper to taste
1 teaspoon shredded lemon peel
Preparation:
Break the fresh salmon into chunks or cut the smoked salmon into
thin bite-size stripes and set aside.
In a large pan cook the onions and garlic in butter until tender.
Remove the garlic when lightly browned. Stir in the whipping cream,
pepper and lemon peel. Bring to boiling; reduce heat. Boil gently
about 5 minutes or until slightly thickened. Drop in the salmon;
heat for some minutes, stirring, then remove from heat.
Cook the pasta in 4 quarts boiling water about 10 minutes. Drain it
al dent. Arrange the linguine on a large serving platter. Spoon the
sauce over the pasta. Sprinkle pepper on top.
