These large
hollow pasta pasta tubes are about an inch in
diameter. Paccheri are so large that they collapse when cooked,
trapping inside them whatever they have been sauced with. The name
means slaps, because they supposedly make a noise like slaps when
lifted by a fork. Paccheri could be stuffed or used with chunky
sauces. Cooking time 7-10 min.
The Recipe:
Paccheri with Tomato Sauce
(preparation time: 15 minutes)
Ingredients for 4 people:
1 pound paccheri
basil
1 can tomato sauce
salt
pepper
1 cloves garlic
2 tablespoon extra-virgin olive oil
Preparation:
Heat oil in a wide frying pan over medium heat. Brown garlic in the
pan, then remove it. Add basil, the tomato pulp, salt, white pepper
and a pinch of sugar. Stir. Let it cook over bright fire for 5
minutes. Cook paccheri until al dente. Drain, mix well with the
sauce, and serve.
