Pronunciation: PEH-neh-teh
Pennette pasta is a smaller version of penne, a popular Italian
pasta shape. As Penne, also this pasta consists of short tubes cut
on the diagonal, the better to scoop sauces inside.
Pennette pasta is
available with smooth or ridged surface. It's very
versatile, and works well mixed with a sauce, or in a casserole,
soup, or pasta salad. Cooking time. Cooking time 10 min.
The Recipe:
Pennette ai Quattro Formaggi (Pennette with
Four Cheeses)
(preparation time: 20 minutes)
Ingredients for 4 people:
3/4 cup Fontina cheese, shredded
3/4 cup Gorgonzola cheese, crumbled
1/3 cup Parmesan, grated
1/3 cup Pecorino Romano cheese, grated
1/2 cup heavy cream
Pennette 16 ounces
freshly ground black pepper to taste
2 tablespoons flat leaf parsley, chopped
Preparation:
Pour heavy cream into a large pan over medium heat. Add the cheeses
and simmer until they are melted, about 5 minutes. Set aside.
Bring a large pot of water to a boil. Add pasta to boiling water.
Cook for 10-12 min. Drain the pasta and immediately add it to pan
and mix well. Transfer to a serving platter, then garnish with
chopped parsley and black pepper to taste, sprinkle with freshly
grated Parmesan and serve.
