Pronunciation: spah-GEH-tee
The name spaghetti means “lengths of
cord” in Italian. Spaghetti is a long, round pasta without holes,
available in various thickness. It is the most popular pasta variety
and it works best with smooth and light tomato or cream sauces,
vegetables and aromatic herbs. Spaghetti is extremely versatile and
complimentary pasta well suited to an infinite number of sauce
varieties. Typical dishes are Spaghetti alla Puttanesca with olives
and capers and Spaghetti alla Carbonara with pancetta and
eggs. Don't use it in pasta salads. Cooking time 11 min.
The Recipe:
Spaghetti with Oil, Garlic and Chili
(preparation time: 15 minutes)
Ingredients for 4 people:
18 ounces Spaghetti
Parsley
Chili
2 big cloves of garlic
6 tablespoons of extra-virgin olive oil
Salt
Preparation:
Boil a pot of salted water, then pour the spaghetti.
In the meanwhile, peel and mince the garlic and brown it in a
saucepan with 5 tablespoons of olive oil with some chili. When the
garlic will be browned, add the chili in small pieces and gently mix
with a wooden spoon. When the spaghetti are cooked "al dente", drain
them and pour them in a warm tureen, sprinkle with the remaining
olive oil and with the one with chili. Mix carefully, add the finely
minced parsley, mix again and serve at once when already steaming.
