Trofie pasta is
a Ligurian specialty.
They are pieces of pasta that have been rolled on a flat surface until
it forms a rounded length of pasta that has tapered ends. It is then
twisted into its final shape. A thin stick can also be used to wrap the
pasta length around to assist in forming the twisted shape.
They're often served with pesto. Cooking time 10 min.
The Recipe:
Trofie al Pesto
(preparation time: 15/20 minutes)
Ingredients:
4 ouncea tub bought fresh pesto sauce
14 ounces trofie pasta
4 ounces freshly grated Parmesan cheese
salt
Preparation:
Heat up some water in a large saucepan, with a tablespoon of salt
and bring it up to a boil. Add the pasta, stir and let it cook for
10 minutes. After that, drain the pasta in a colander. Then tip it
back into the saucepan, add the pesto sauce and stir it to give
everything a good coating. Finally, serve in the hot pasta bowls
with the Parmesan in a bowl to sprinkle over.
