Provinces of Siena, Florence, Pistoia,
Arezzo, Pisa. The most important production zone is Chianti
Area. In the tradition of Vin Santo making, the enologist is
not allowed to even get close to this wine. Late harvested
grapes of Malvasia and Trebbiano are hung on drying racks
and air-dried until pressed after about 6 weeks. The juice
then is inserted into small wood barrels called "caratelli", where fermentation and oxidation slowly mature this wine. |
